Canned Black Beans

Ingredients:
2 cups water
¼ cup chopped onion
¼ cup chopped green bell pepper
¼ cup chopped zucchini
½ cup broccoli florets
¼ cup chopped carrot
1 can black beans
3 tomatoes, chopped
2 garlic cloves, minced
Salt to taste
1 tsp ground cumin
1 tsp red chili powder
1 tsp coriander-cumin powder
½ tsp black pepper
1 tsp Cajun seasoning (optional, for a Mexican flavor)
¼ cup enchilada sauce (optional, for extra spice)
½ cup vegetable broth (optional, for extra richness)
Instructions:
In a medium pot, add 2 cups of water and heat it over medium heat. Once warm, add the chopped onion, carrot, broccoli, zucchini, and green bell pepper. Cook, stirring occasionally,Cook, stirring occasionally, until the vegetables are tender, about 10 to 15 minutes.
Add the minced garlic and cook for another 2 minutes.
For a thicker consistency, you may use tomato purée in place of chopped tomatoes. Add a small amount to achieve the desired thickness.
Stir in the black beans, cumin powder, red chili powder, coriander-cumin powder, Cajun seasoning, salt, and black pepper. Reduce the heat to low-medium and let the soup simmer for 20-25 minutes, allowing the flavors to meld.
For a spicier variation, add enchilada sauce. For extra depth of flavor, homemade enchilada sauce works wonderfully.This step is entirely optional.
Optional: For a thicker soup, add vegetable broth.
