🌟Tava Bhaji Recipe 🌟

Tawa Bhaji Pav is a popular Indian street food, especially loved in Mumbai. It’s a spiced vegetable mash (bhaji) served with buttered, toasted pav (bread rolls). Here’s how you can make this flavorful dish at home.

Ingredients:
For the Bhaji:
2-3 medium potatoes (boiled and mashed)
2 medium capsicum chopped (Green bell pepper)
3 medium red onion – finely chopped
6-7 tomato – finely chopped
5-6 boiled cauliflower florets
50 grams dry green peas.
3 tbsp pav bhaji masala as per your taste (store-bought or homemade)
2 tsp red chili powder
1 tsp cumin seeds
2 tsp kashmiri chili powder for color(optional)
Salt to taste
4 tbsp butter or oil (for cooking)
Fresh coriander leaves – chopped (for garnish)
Lemon wedges (for serving)
Garlic chutney (check my video how to make garlic chutney)

For the Pav:
12 pav buns (or dinner rolls)
butter

Instructions:
1: Prepare the Bhaji
1. Heat Oil & Spices:
In a large pan or tawa, heat 4 tablespoons of butter or oil over medium heat. Add cumin seeds. Let them splutter.

2. Cook Onions & Green Chilies:
Add the finely chopped onions and green chilies to the pan. Sauté until the onions turn soft and golden brown.add little water as Needed.

3. Add Tomatoes:
Add the chopped tomatoes and cook until they soften and release oil.Add the garlic chutney and cook for a minute until the raw smell disappears.

4. Add Masalas:
Stir in red chili powder and pav bhaji masala. Mix well and cook for 2-3 minutes until the masalas release their aroma.

5. Mash the Veggies:
Add the boiled and mashed vegetables (potatoes, cauliflower and peas) to the pan. Use a masher to mash the mixture further, blending all the ingredients well. Add salt to taste.

6. Add Water & Simmer:
Add a little water (about 1/2 to 1 cup) to achieve a smooth, semi-thick consistency. Let the bhaji simmer for 5-7 minutes on low heat, stirring occasionally to prevent it from sticking.

7. Finish with Butter & Garnish:
Stir in a tablespoon of butter for richness and flavor. Garnish with fresh coriander leaves.

Step 2: Prepare the Pav
Butter the Pav:
Slice the pav buns horizontally. Heat a tawa or griddle and add 1-2 tablespoons of butter. Place the pav on the tawa and toast them until golden brown and crisp on both sides.

Step 3: Serve
Serve the hot bhaji on a plate, garnished with chopped coriander, a dollop of butter on top, and a squeeze of lemon juice.
Serve the toasted pav alongside the bhaji.

Tips:
1. For extra flavor, you can add a bit of garlic chutney
2. Serve with a side of chopped onions and lemon wedges for added freshness.
3. You can also top the bhaji with extra butter before serving to enhance its richness.

5.Soak dry green peas overnight or for 5-6 hours in warm water, then boil them.
