How to Make Chicken and Leek Pie - Ep. 42

This is a classic dish, one of my all time favourites actually. Done right this will have everyone begging for more! Its simple and really easy to make, doesnt utilise cream like some other recipes do and you can practically stick as little or as many variations as possible into the filling. Definitely a recipe to keep for those cold winter days!

Ingredients:

2 large chicken breasts (cubed)
1 Tbs butter
1 large leek (or two medium leeks) sliced 1 cm rings
3 celery stalks finely sliced
3 carrots finely diced
handful of fresh thyme
1-2 cloves garlic diced
2 Tbs Cornflour
285 ml milk
1 wineglass of either white wine or water
1 chicken stock cube (optional)
Puff pastry
Salt and Pepper to season.

EGG WASH
1 egg yolk beaten with a little added water
