Sourdough Or Fruit yeast which one going to be my go to bread?
I thin both have their own unique characters full of flavors and beautiful natural ingredients which make me feel better about what i am eating.
Sourdough Starter :
32G water 32 flour 4G Starter RT 27c for 10 hours
Fruit yeast Poolish :
35G yeast water 35G flour RT 27c for 10 hours

Sourdough bread :
70G Sourdough starter
7G salt
250G water
350G bread flour

Fruit yeast poolish bread :
70G poolish
7G salt
250G water
350G bread flour

Bulk fermentation 2 hours at 27c
Cold Proof overnight .
