Lemon Almond Cookie Pie Ingredients
Cookie:
1/2 cup light brown sugar (120g)
1/2 cup white sugar (105g)
1 cup all-purpose flour (150g)
1 Tablespoon lemon zest
1 teaspoon almond extract
1 stick butter, unsalted
1/8 teaspoon salt
2 large eggs
1 9-inch pie crust

Red Frosting:
2 cups powdered sugar (210g)
2 Tablespoons canola oil
1 Tablespoon water
1 Tablespoon lemon juice
1 teaspoon lemon zest
1/8 teaspoon salt

Green Frosting:
1 cup powdered sugar (~120g)
1 Tablespoon water
1 Tablespoon canola oil
1/2 teaspoon almond extract
1/2 teaspoon vanilla extract
1/8 teaspoon salt
