My go-to side dish every fall is this grain salad featuring red quinoa and roasted butternut squash. I love the nutty flavor of the quinoa paired with the sweet flavor of the squash. And then there are the dried cranberries and pumpkin seeds, which make it even more festive. To tie everything together, I dress the grain salad with a roasted garlic vinaigrette flavored with freshly grated ginger and sherry vinegar for some nice zip!
