Come along with me as I show you our lunches for the week. I must say, lunch is my most dreaded meal, simply because I don't have the same inspiration as I do for dinner. As much as I would love to serve sandwiches every day, I know I need to get some variety in here.
Our lunches were:
Sesame chicken, Pasta and meat sauce, tuna salad and tortilla chips, nachos with taco meat & cheese, ramen noodles

Sesame Chicken

-3 lbs boneless skinless chicken breasts cut into 1 inch pieces
-4 eggs beaten
-salt & pepper to taste
-1 cup all purpose flour
-1 cup cornstarch or arrowroot powder
-oil for frying(I use coconut oil or pork lard)

SAUCE:
-1 tsp garlic powder
-1/2 cup honey
-1/2 soy sauce (or liquid aminos)
- 4 TB ketchup
-6 TB brown sugar
-4 TB rice vinegar
-2 TB toasted sesame oil(I use pork lard)
-4 TB cornstarch or arrowroot powder
-4 TB sesame seeds
-4 TB sliced green onions
1. Place eggs, salt & pepper in a bowl. Stir to combine
2. Place flour and ½ cup of cornstarch in a shallow bowl or plate. Stir to combine.
3. Dip each piece of chicken into the egg mixture, then into the flour. Repeat the process with all the chicken.
4. Heat 3 inches of oil in a deep pan to 350* F
5. Add 7-8 pieces of chicken to the pan. Cook for 5 minutes or until crispy and golden brown. Repeat the process with all the chicken.
6. Drain chicken on paper towels
7. While the chicken is cooking, combine all the sauce ingredients in a bowl and stir well.
8. Add the sauce mixture to a saucepan and bring to a simmer. Heat for 3-4 minutes.
9. Add the crispy chicken to the sauce and toss to coat. Sprinkle with sesame seeds and green onions.
