Tannins are chemical polyphenol compounds and can be found in many plants, including nuts, tea and of course grapes. In grapes tannins can be found on skins, seeds and stems. apart of that tannins can come from oak barrels during wine making process and additives in the wine. Did you know that commercial tannins can be added to the red grapes before the fermentation. This process protect the wine from oxidation and stabilize the colour of the wine. Tannins are antioxidant and play the key role in the aging of the wine.
