Meatballs in Puff pastry

Just dying something different with meatballs. My daughter just calls it meatball pie! But really its just another way to enjoy mince. Adding a variety of flavours brings such a rich taste to the meal.

Ingredients

1kg Beef mince
500g Pork mince
2 medium onions
2 medium carrots
3 eggs
Semi sun dried tomatoes
Semi sun dried capsicum
Garlic
Mustard
Cheese
Burger sauce
Puff pastry


Method

1. preheat oven to 180c fan
2. Combine diced onion and carrot in food processor and blend. Once blended add semi sundried tomato’s, garlic, mustard and combine. Finally add 2 eggs and blend for 15 seconds.
3. In a large bowl combine meats and the blended mix together.
4. Using a cupcake tray, spay oil first, lay out a sheet of puff pastry and gently push down to start to form a cup. Making a meatball from the mince mixture and laying it into the ‘cup.’ Repeat till cups filled.
5. Add semi sun dried caps, burgers sauce and grated cheese to the top of the meatball. Cover with another sheet of puff pastry. Cut pastry and pinch edges to seal individual ‘cups.’
6. Whisk up an egg in a bowl and brush top of puff pastry, this will allow it to brown. Place in oven for 45min to 1hr depending on the size of the meatball.
7. Once cooked serve up immediately
