Homemade Protein Bars
Ingredients:
Nuts:
½ small cup almonds
½ small cup cashew nuts
½ small cup walnuts

Seeds:
½ small cup pumpkin seeds
½ small cup melon seeds
½ small cup sesame seeds
1 tbsp chia seeds

Other Ingredients:
½ cup coconut powder (plus extra for topping)
2 tbsp desi ghee (clarified butter)
1 bowl jaggery (gurr)
¼ tsp baking powder

Instructions:
Roasting the Nuts & Seeds:
Heat 1 tbsp desi ghee in a pan.
Add almonds, cashew nuts, and walnuts. Cook for 2-3 minutes until lightly roasted.
Add pumpkin seeds, melon seeds, and sesame seeds. Cook for 1 more minute, stirring well.
Mix in the coconut powder and cook for another 1-2 minutes.
Add chia seeds, mix well, and set aside.

Preparing the Jaggery Syrup:
In the same pan, add 1 tbsp desi ghee and jaggery.
Cook on low flame until it melts into a smooth paste.
Add ¼ tsp baking powder, mix well, and let it cook briefly.

Combining & Setting the Bars:
Add the roasted nuts and seeds mixture to the jaggery syrup.
Mix thoroughly to coat all ingredients evenly.
Transfer the mixture into a cake mold or a flat tray.
Sprinkle coconut powder on top and press down firmly.
Let it cool completely.
Once set, cut into long bar shapes.
Storage:
Store in an airtight container for up to 2 weeks.
