Tofu Stir Fry

Ingredients
For the Tofu

250 extra-firm tofu, drained and sliced into rectangular slices
3 tbsp soy sauce
1 tbsp grated ginger
1 Tbsp maple syrup
1 tsp siracha sauce (optional)
1 tsp Sweet chilli sauce (optional)
2 tsp sesame oil

For The Stir-fried Vegetables
2 tbsp olive oil
Ginger, peeled & finely julienned - 2” piece
Garlic (sliced)-  3-4
Spring onions( sliced )- 2-3
Rehydrated mushrooms- 1/4th cup
Broccoli florets(blanched) - 1/2 cup
Asparagus - 2-3 stalks
Cherry Tomatoes(halved)- 5-6

For garnish
Sesame seeds
Spring onion greens

Method
 1.⁠ ⁠Dry the tofu properly with the help of a kitchen towel and cut them into rectangular slices.
 2.⁠ ⁠Now take a bowl and add soy sauce, maple syrup, sriracha, Sweet chilli sauce, grated ginger & sesame oil. Mix well.
 3.⁠ ⁠Then add the cut slices of tofu into the marinade and coat well.
 4.⁠ ⁠Cover and leave to marinate for atleast 20- 30 mins.
 5.⁠ ⁠Now prepare the veggies by chopping and blanching them. (When making a stir- fry, it’s very important that all the prep is done and kept ready before turning the flame on)
 6.⁠ ⁠When ready to cook, heat a frying pan and add the marinated tofu on high heat. Once golden on both sides,  Remove and keep aside.
 7.⁠ ⁠For the stir-fry, add a little more oil if needed in the same pan.
 8.⁠ ⁠Now add the garlic & ginger. Sauté till fragrant and then throw in the spring onions, followed by the blanched broccoli & asparagus.
 9.⁠ ⁠Toss on high flame just add to add some smokiness to them without overcooking them.
10.⁠ ⁠Finally add the mushrooms, the cherry tomatoes, followed by the remaining marination. Cook for a few second to allow the flavours to get infused in the veggies.
11.⁠ ⁠To serve, add the stir-fried vegetables to the base of a platter, the sticky tofu on top, garnish with sesame seeds and some spring onion greens and serve immediately.

Tofu Rice Paper Rolls

 1.⁠ ⁠Prepared sticky tofu
 2.⁠ ⁠Fine juliennes of carrot & English cucumber
 3.⁠ ⁠Baby spinach
 4.⁠ ⁠Napa cabbage
 5.⁠ ⁠Peanut sauce- made with peanut butter, soy sauce, sriracha, sweet chilli and a dash of hot water to adjust the consistency
 6.⁠ ⁠Rice paper (store bought)
 7.⁠ ⁠Sesame seeds and spring onion greens for garnish

Method
 1.⁠ ⁠Start by softening the rice papers in water for a few seconds
 2.⁠ ⁠Then add the tofu, the veggies, a drizzle of soy sauce if desired.
 3.⁠ ⁠Wrap, roll, garnish and serve with the peanut sauce.
 4.⁠ ⁠Dig in immediately 😉
