Lamb stew - my grandmother’s way 💕

Ingredients:

3 tablespoons vegetable oil
1 onion, chopped
4 green chilies, slit
Few sprigs thyme
± 20 whole peppercorns
1 ½ teaspoons ginger & garlic paste
¼ tomato, chopped
500 grams lamb/mutton
Salt to taste
¼ cabbage
2 large carrots or 4 medium carrots
150 grams green beans
¼ cup peas
2 tablespoons all-purpose or cake flour
2 large potatoes
Boiling water as needed

Method:
Heat the vegetable oil in a large pot on medium-high heat.
Add in the chopped onion, slit green chillies, thyme & whole peppercorns. Mix & sauté until the onions are translucent.
Add in the ginger & garlic paste & the chopped tomato. Mix & cook until the tomatoes are soft.
Add in the lamb or mutton pieces & salt to taste. Mix well & sauté for 2 minutes.
Thereafter add a little boiling water, cover & cook for 5 minutes.
Add in sliced cabbage, cut green beans & sliced carrots. Cover with boiling water, mix well & cover, allowing it to cook until the veggies are almost soft.
Add in peeled & cubed potatoes - add more water if needed & cook until the potatoes are almost soft.
Add in the peas & cook until the potatoes are completely soft.
At this point make a slurry with the flour & some water - it shouldn’t be too thick or too runny, add the slurry to the pot & mix well.
Allow the stew to thicken slightly, turn off the heat & plate.
This lamb stew pairs well with soft white bread.
