How to cook "zeppole calabresi" (also known as „crispedde“) - the traditional savory snack from Southern Italy (in particular from Calabria)
Zeppole are typically prepared for celebrations, especially during Christmas season. These delicacies consits of pizza dough mixed with mashed potatoes and are crispy fried in extra virgin olive oil at 180 degrees Celsius. There exist sweet and salty versions, the salty version is more common. Sometimes they are also filled with anchovies, or as in this video recipe, with spicy salamino piccante.
They typically have a round shape with a hole – like a big ring – which is a valid reason to call them the „Italian doughnut“.

Ingredients for 4 persons:
400 g of flour 00 type
200 g of mashed potatoes
5 g of fresh yeast
half teaspoon of sugar
1 teaspoon of salt
400 ml of extra virgin olive oil (for frying)
200 ml of warm water
