I absolutely LOVE carrot cake, so I wanted to share my carrot cake recipe with you guys. It's really moist carrot cake with chopped walnuts inside. It is filled and decorated with the most delicious cream cheese frosting, which is perfect for piping and decorating cakes with. It is so smooth creamy and has just the right amount of sweetness. This is an easy carrot cake recipe as you don't need to use an electric mixer. The recipe can be found below!

Carrot Cake Ingredients:
250g self-raising flour
1 ½ tsp ground cinnamon
½ tsp ground nutmeg
1 tsp baking powder
200g dark brown sugar
3 eggs
150ml vegetable oil
250g grated carrots
50g chopped walnuts (plus extra for decoration)

Cream Cheese Frosting Ingredients:
50g butter
50ml double cream
1 tsp vanilla extract
200g cream cheese
100g icing sugar

Carrot Cake Decoration:
Chopped walnuts
Sliced almonds
Thyme

1. Preheat oven to and grease and line a 6 inch baking tin.
2. Sift the flour, spices and baking powder into a bowl then stir in the sugar.
3. Mix in the eggs one at a time then fold in the oil.
4. Then, fold in the carrots and chopped walnuts.
5. Pour into the baking tin, then bake for 30 minutes or until a skewer comes out clean. When baked, transfer to a cooling rack and leave to cool completely.
6. To make the cream cheese frosting, beat the cream until it reaches medium stiff peaks.
7. In a separate bowl, beat the butter until pale then mix in the icing sugar. Then, beat until light and fluffy.
8. Add the cream cheese to the butter mixture and beat until combined. Then, add the whipped cream and beat for 30 seconds or until smooth. Transfer half of the icing to a piping bag fitted with your desired piping tip.
9. When the cake is completely cool, trim the top and slice horizontally to create 2 layers.
10. Pipe a ring of cream cheese icing around the edge of the bottom cake layer, then fill the centre with more cream cheese.
11. Place the second cake layer on top and spread a layer of icing on top. Pipe the rest of the icing around the top and bottom of the cake.
12. Sprinkle some chopped walnuts onto the centre of the cake and decorate with sliced almonds and sprigs of thyme.
