As far as pressure-canning goes, it doesn't get much easier than this. We're going to walk through every single step, from peeling the carrots to waiting for those lids to pop!

Carrots Pressure Canning Recipe:
-Chop or dice carrots.
-Place carrots in sterilized quart or pint jars (this is raw pack; for hot pack you need to blanch the chopped carrots first).
-Fill jars with boiling water, leaving 1 inch of headspace.
-Process jars (according to your pressure-canner's instructions) at 10lbs of pressure. Process 25 minutes for pints, 30 minutes for quarts.
