RECIPES:

🧆 FALAFEL BALLS 🧆:

200g/ 1 cup dried chickpeas or 3 cups/ 500g canned chickpeas ( about 2x 15oz drained canned of chickpeas.)
2L of water / 8 cups
2 cloves of garlic
1 onion quartered
1/2 bunch of parsley
1 bunch of coriander
I chilli without seed ( optional)
The juice of 1 squeezed lemon
1tsp salt
1 tsp cumin
100g/ 1 cup of chickpea flour or any flour

Make balls
Tip: put oil on hands to form balls

Place your falafel balls in a skillet on medium heat and let them brown for about 2-3 minutes making sure to move them gently in your pan for your falafel balls to be browned all around
Remove your falafel ball from the oil and place them on paper towel

Fry 3-4 minutes
Tip: to make sure oil is at right temperature: put spoon in oil, il small bubbling: oil is ready

🥙 PITA BREAD 🥙

1 +3/4 tsp / 7g active dry yeast
1 cup / 240g warm water (90 to 100 degrees F/32 to 38 degrees C)
1 to 1.5 tablespoon /14g or 21g olive oil
1 ¾ teaspoons / 8g salt
2 ¾ cups / 330g all-purpose flour, or more as needed
1tsp /4g sugar

proof yeast
in a bowl add part of the flour and salt
add yeast cake
oil
add AP flour, up to 1 cup
