Roti Canai goes well with chicken curry. Today I am making Roti Canai, and for the next video I will make Malaysian Chicken Curry. This roti canai is fluffy, flaky and delicious!

ROTI CANAI (makes 6 roti)
 
Ingredients
==================== 
2 ¼ cups (300 g) all-purpose flour
1 tsp salt
2 tsp sugar
½ cup + ⅛ cup (150 ml) water
⅛ cup (30 ml) canola oil
1 large beaten egg at room temperature
2 ½ tbsp soft unsalted butter
 
Preparation
==================== 
⇒ In a large mixing bowl, add flour, salt and sugar. Mix well and make a hole in the centre.
⇒ Add water, egg and oil. Mix well to make a soft, workable dough.
⇒ Knead gently for about 3 minutes. Add small amounts of flour if the dough becomes too sticky, but not too much because we want a pliable dough that remains a bit sticky.
⇒ Cut the dough into 6 pieces and form into balls.
⇒ Place the balls into a bowl with a small amount of oil. Coat the balls with oil.
⇒ Cover the bowl and put it in fridge overnight.
⇒ Remove the balls from the fridge and put place them on an oiled surface.
⇒ Flatten the balls as thin as possible, by hand with oil or by using a rolling pin.
⇒ Spread with butter and form into thin, long rolls (as long as possible).
⇒ Wrap the dough and twist and pile into a knot shape. Do the same for all balls.
⇒ Heat a non-stick pan on medium heat.
⇒ Oil the counter surface again. Using a rolling pin, flatten the first ball created above to about 1 mm thick.
⇒ Grill 1 – 1 ½ minutes until golden brown. (While this roti is cooking, prepare the next one for frying)
⇒ Turn and grill another 1 – 1 ½ minutes until golden brown.
⇒ Remove and place on the counter.
⇒ Slap on four sides to release the air bubbles.

The canai will be fluffy, flaky and delicious. Serve warm with chicken curry.
