Ingredients:

1/2 cup cooking oil
1/2 kg mutton
1 tablespoon garlic paste (leshan paste)
1 tablespoon ginger paste (adrak paste)
1 teaspoon salt (namak)
1 medium onion paste (pyaz)
5 medium tomatoes
1/2 teaspoon turmeric powder (haldi powder)
1 teaspoon dry coriander powder (khushak dhanyian)
1 teaspoon cumin powder (zeera powder)
1 cup water
1/2 cup yogurt (dahi)
1 teaspoon red chilli crushed (kutti lal mirch)
1 teaspoon black pepper powder (kal mirch powder)
4-5 green chilli (hari mirch)
1 tablespoon fresh coriander leaves (hara dhaniyan)
1 tablespoon ginger (adrak)


Directions:

Prepare the Mutton: Heat oil in a large karahi and Add mutton pieces and stir-fry until browned than Add the ginger garlic paste and sauté for a minute after that add onions paste.
Cook the Meat: Add the red chili powder, cumin, coriander powder, and salt. Stir well.
Simmer with Tomatoes: Add chopped tomatoes and cook until soft and the oil separates. Add yogurt and cook until the mutton is tender.
Green Chilies and Garam Masala: Add green chilies and garam masala towards the end and cook for a few more minutes.
Garnish and Serve: Garnish with fresh coriander and serve hot with naan or rice.
