INGREDIENTS
Beef, 1000 g
Noodles, 100 g ( or more)
Some green vegetables ( choose what you like)
Water, 1000 ml
Soybean paste, 4 tbsp
Sugar, 1 tbsp
Oil, 4 tbsp ( for stir-frying)
light soy sauce, 3 tbsp
Cooking wine, 2 tbsp
Fresh red chili, 3
Ginger, 3 slices
Scallion, 30 g
Garlic, 5 cloves
Star anise, 2
Cinnamon, 1

Instructions
1. Cut the beef into big cubes.
2. Blanch the beef, remove the foam, then transfer to a plate
3. Heat a wok over medium heat, add sugar first, let the oil melt the sugar, then add scallions, stir-fry for a while, when you smell the aroma of the scallion, add the blanched beef, add light soy sauce, cooking wine, cinnamon, garlic, star anise, red chili, garlic, and soybean paste
4. Add water to the beef, bring to a boil, cover and simmer for 90 minutes over low heat.
5. 90 minutes later, turn off the heat.
6. The braised beef is ready.
7. Heat a pot of water, blanch the vegetables and boil noodles until cooked through.
8. Transfer to a bowl, arrange the blanched vegetables, pour in the braised beef.
9. The braised beef noodle soup is ready.
