We had a few viewer requests for the recipe to make the potato curry filling I use to make my potato samosas. This quick and easy recipe is my go to for making my potato samosas

Ingredients - to make ~1 1/2 dozen regular samosas
5 medium potatoes, sliced into chips/fries
1/4 cup oil
1/2 tsp jeera
1/2 tsp hurdee powder
1 tsp salt
To be added raw to cooled curry:
1/2 onion finely chopped
Handful of:
Fresh dhania
Spring onion
Few sprigs of mint
1 green chillie (to your preference)

Cool curry, then add onions, herbs and chillie and mix well. The fill samosas as you would do for chicken or mince samosas.
