Coleslaw is one of the most basic, refreshing and satisfying side dishes, and there are a hundred or more different ways to make it: creamy, lean, rich, spicy, exotic, thinly sliced or chopped, like this one.

And since I discovered this chopped version, quickly made with the help of a food processor, I rarely make another one these days. It's just so quick and easy.

Perhaps the most important thing you can do to this recipe is to give it a rest in the fridge, to improve the texture and let the flavors mingle.
