Processing the banana leaves:

Place a griddle on gas flame, place the banana leave on it, now press the leave by a cotton cloth. This process will help you to fold the leaves easily without breaking corners.

Processing the Bhetki filet:

A. Bhetki filet : 500 gm. Now add:
B. Lemon : 1 nos
C. Salt : According to taste.

Now mix them well and keep aside for 15 to 20 minutes. Now in a pot take the below items:
D. Black mustard seed : 50 gm
E. Yellow mustard seed : 50 gm

Now add water to soak for 20 minutes. Now strain it. Take them in a mixer grinder and add:
F. Green chilli : 7 to 8 nos
G. Salt : According to taste
H. Water : Little bit.

Make a paste of the above items. Now take one big bowl, place the paste in it and add:
I. Curd : 3 tbsp
J. Turmeric powder : 1/2 tsp
K. Mustard oil : 3 tbsp.

Now add the marinated fishes in it, mix them well and keep aside for 30 minutes. After 30 minutes, place one fish piece on the banana leave(medium sized, 8"-6"), place some mustard paste on it, one green chilli at the top, fold it and tie with a thread. Now take one frying pan & add:

L. Mustard oil : 2 tsp and brush it on the surface. Now place the fish pieces(covered with banana leaves) on it, cover it and fry it for 5 minutes with low to medium flame, open the cover, turn the pieces again cover it and let it fry. Repeat the frying process for 10 to 15 minutes. The Bhetki Paturi is ready. Serve it with rice. Enjoy.
