Methi Thepla is a popular Gujarati flatbread made with fresh fenugreek leaves (methi) and a blend of flours and spices. It's nutritious and makes a great breakfast or snack. Here’s a simple recipe for making methi thepla.

Ingredients:
1 cup whole wheat flour
½ cup besan (gram flour)
1 cup fresh fenugreek leaves, finely chopped
2 tbsp yogurt,
1 tsp ginger-garlic paste
1 tsp cumin powder
1 tsp coriander powder
½ tsp turmeric powder
1 tsp red chili powderSalt to taste
1 tbsp oil (for the dough)Water, as required (to knead the dough)Oil or ghee for cooking
Instructions:

Prepare the dough:In a large mixing bowl, combine the wheat flour, besan, fenugreek leaves, green chilies, ginger-garlic paste, cumin powder, coriander powder, turmeric powder, red chili powder, and salt.
Add yogurt and a tablespoon of oil, then mix everything well.Gradually add water and knead the mixture into a smooth, soft dough.
The dough should not be too sticky or too hard. Let it rest for 10-15 minutes.Roll the theplas:Divide the dough into small equal-sized balls.
Roll each ball into a thin, round thepla using a rolling pin. Dust with flour to prevent sticking.Cook the thepla:Heat a tawa (griddle) on medium heat. Place a rolled thepla on the tawa.
Cook for about 30-40 seconds until you see bubbles. Flip it, apply oil or ghee on the cooked side, and let it cook.Flip again, apply oil or ghee on the other side, and cook until golden brown spots appear on both sides.

Serve:Serve the methi theplas hot with yogurt, pickle, or chutney.They are perfect for tiffins or even while traveling, as they stay fresh for a longer time!
