I like to make fish cakes using middle cut mackerel from the can - the firmer meat of the middle cut helps the fish to stay intact through the process of making the fish cakes. With a no name brand can of fish costing R27, it is a delicious snack or main meal at a very small cost.

Ingredients:
1 can of middle cut Mackerel (400g)
1 med onion, finely chopped
4 cloves garlic, crushed
2 green chillies
generous handful of spring onion
dhania (coriander)
2 sprigs mint
1 egg for binding
1 lemon (to use the zest)
2 med potatoes, boiled for mashing
1 tbs mayonnaise
Grind of salt and pepper to taste
Paprika
Sprinkle of dried mixed herbs
1 tsp soy sauce

For breading:
flour with salt added
egg (beaten and salted)
bread crumbs

Served with thin cut chips and sweet chillie dipping sauce.
