Hi all,
I have always heard my husband talk about the yummy sandwiches of Bombay. He used to explain in length the way the sandwich guy made them. I did my little research, got all the ingredients and tried to bring that taste to my dining table. I was so thrilled when I passed the test in flying colours.

Ingredients :
To cook Bombay Street Style Spicy Green Chutney :
1 small bunch Cilantro
10 -15 mint leaves
1 garlic pod
1/4" ginger (optional)
2-3 green chillies ( adjust)
1 onion
1 to 2 teaspoon of chopped/grated coconut
Juice of half of the lemon
salt to taste

Method to make Bombay Street Style Spicy Green Chutney:

Grind all the ingredients to a fine paste.
Add lemon juice, salt and mix well.

Ingredients to cook Bombay Style Masala Toast:

8 bread slices ( cutting the corners is optional)
3 tablespoons butter ( salted)
1 teaspoon chaat masala
3 tablespoons of Bombay Green Chutney
1 onion ( sliced thinly or into roundels/rings)
2 tomatoes ( deseeded and cut into thin roundels)
1 beetroot ( boiled and cut into thin roundels, optional)
1 capsicum ( sliced thinly or roundels)

For the Masala:

4 medium-sized potatoes ( peeled, boiled and roughly mashed)
1/4 cup peas ( boiled)
small bunch of cilantro ( finely chopped)
2 green chillies + 1 garlic pod ( make a coarse paste using mortar and pestle)
1/2 teaspoon red chilli powder
1/8 teaspoon turmeric powder
a pinch of garam masala (optional)
a pinch of asafoetida
1 teaspoon oil
salt to taste

For Garnish :

Butter
Nylon Sev / Dressing Sev
Tomato Ketchup

Method to make Bombay Style Masala Toast :

1. In a pan, heat oil over a low flame and add the boiled peas and saute' it for half a minute.
2. Add the mashed potatoes, turmeric powder, asafoetida, chilli powder, chilli- garlic paste, garam masala, salt and mix well over medium flame.
3. Add the freshly chopped cilantro and switch off. Your masala is ready.
4. Prepare your green chutney.
5. Grease the hand sandwich maker ( if you are using one) or keep a greased skillet over low flame.
6. Spread a layer of butter, green chutney and 'masala on one side of bread.
7. Top it with sliced vegetables, sprinkle chaat masala and cover it with another bread layered with butter and green chutney ( optional).
8. Place it inside the sandwich maker, or the skillet.
Tip: You can grease the top of the bread with butter again for a more crunchy taste.
9. Allow the bread to brown on both sides, remove the toast.
10. Spread butter on hot toast, cut it into quarters and garnish with sev and ketchup

Serve hot to your family, friends and guests. It is sure to bring you loads of compliments.
