Since switching to 2.5 - 3.5 gallon batches, I've really enjoyed the use of my Anvil Foundry 6.5 gallon system, so here's a review that focuses on features and performance while making those 2.5 - 3.5 gallon batches.

Quick Numbers:

Max Capacity: 5 gallons of water + 12 lbs of grain (yields 3.5 gallons of beer at around 8%)

Heat times:
- 55 Minutes (5 Gal Room temp water to Mash temp)
- 35 Minutes (4.5 Gal wort from Mash temp to boil)

Generally 0.5 - 0.75 gal boil off during 1 hour boil
