Rock cakes have a crumbly texture on the outside with a slightly softer interior. They are often compared to scones but with a coarser texture and more rugged appearance.
Traditionally, rock cakes are made with flour, baking powder, sugar, butter, mixed dried fruit, eggs, and sometimes spices like cinnamon or mixed spice. They can be made with variations, including different types of dried fruits, nuts, or even chocolate chips.
Rock cakes have been mentioned in various British literary works. For example, they are featured in J.K. Rowling's Harry Potter series, where Hagrid makes rock cakes for Harry, Ron, and Hermione.
Rock cakes are often enjoyed as part of an afternoon tea spread in the UK, alongside other traditional treats like scones, finger sandwiches, and various pastries.

Taking Cooking food back to basics.

Ingredients:
- 250g (2 cups + 1 tbsp) plain flour
- 2 tsp baking powder
- Pinch of salt
- 100g (1 stick) cold unsalted butter, diced
- 75g (1/4 cup + 2 tbsp) caster sugar
- 1/2 tsp mixed spice or cinnamon (optional) see below
- 150g (1 cup) mixed dried fruit (e.g., sultanas and raisins)
- 50ml (1/4 cup) buttermilk
- 1 large egg
- 1 tsp vanilla extract (optional)
- 2 tbsp demerara sugar (for sprinkling)

Mixed spice
1 tbsp cinnamon
1 tsp Nutmeg
1 tsp allspice
1 tsp ginger
1/2 tsp cloves
1/2 tsp coriander

Preheat your oven to 200°C (180°C fan) / 400°F / Gas Mark 6.
