又漏咗講:
中型200克左右既青邊鮑,室溫放入水計80度,38小時。
如果用250克嘅,用80度,48小時。

*要達致溏心效果,切忌使用明火

花少少心機,就可以將一隻急凍青邊鮑,搖身一變,變成溏心質感嘅原汁扣鮑片,
鍾意食溏心鮑魚又懶得發乾鮑?乜乜牌罐裝鮑魚細隻到唔開胃?
今次呢個賀年菜啱晒喇,做節團年,家人生日都啱使.
低溫慢煮版本,做到溏心嘅效果。不過做到還做到,個味始終都係乾鮑正。自己屋企做,抵過去酒樓,唔使睇火,要幾大隻有幾大隻。

To turn a frozen abalone into a decent dish? It’s actually not that difficult, what you need is just patience. The texture could turn out to be a chewy one which is similar to the dried abalones. The is a good idea to make for CNY, or maybe parents birthday. I am doing it sous vide to make it easy and convenient for everyone, less hassle and you don’t have to pay attention to it all the time, and it’s relatively cheap too! 澳洲青邊鮑 2隻
乾瑤柱 4粒
新鮮雞腳 4隻
冰糖 2粒
冬菇 2隻
金華火腿 2片

蠔油 半茶匙
糖 半茶匙
粟粉 1茶匙
水 1湯匙

Ingredients:
Aussie Green Lip Abalone x2
Dried Scallop x4
Fresh chicken feet x4
rock sugar x2
Shiitake mushroom x2
Jinhua Ham x2

Oyster sauce 1/2 tsp
sugar 1/2 tsp
corn starch 1 tsp
water 1 tbsp
