Today’s recipe I’m certain you’ve never heard of! I’m going to be showing you how to make some gyro empanadas. I’m talking tender/ flaky Chilean inspired empanada dough, a rich meat filling with all the wonderful flavors of a gyro! What I love most about these hand held pies is that you can pop one in the toaster oven or microwave to heat up and eat it on t he go! They’re surprisingly super quick and easy to prepare and store great in the freezer, so Let’s get started!

Filling:
1lb ground beef
1lb ground lamb
1 onion
2 cloves garlic
1 tbs. flour
1 cube beef bouillon
1/2 cup water
1 tbsp. oregano
1 tbsp. cumin
2 tsp salt
1 tsp pepper
Fried potatoes
1/2 cup feta cheese

Dough:
110 grams Lard or vegetable shortening
1 cup hot water
500 grams All Purpose Flour
1 tbsp. salt

Directions:
Start off by making the dough, in a bowl combing the lard with hot water and mix until the lard has melted. Add the flour and salt and mix until combined and the ball becomes smooth. Cover it and allow it to sit for at least 1 hour. In a pan add the lamb, beef, onion and spices and fry until everything has browned up. push the meat to the side and add the spoonful of flour to the pan and beef bouillon. mix everything together and make sure the meat is nice and saucy. If needed, add more water and check to make sure the mixture is well seasoned. Place the mixture to the side and allow it to fully cool.
Peel and cut 2 potatoes and fry them up in a bit of oil and once ready add them to the meat filling with 1/2 cup of parmesan cheese. Now it is ready to assemble the empanadas, divide the dough into 12 balls or simply divide the dough into 2 rolled out parts and cut it into rectangles. Add a large spoonful of the mixture into the rectangle, wet the edges and fold the dough over while crimping the edges of the dough. Place the empanadas on a parchment lined baking sheet and brush the tops with a beaten egg. Place into a preheated oven at 400 F. and Bake the empanadas for 35 to 40 minutes depending on the size of the empanada and Enjoy!
