My name is Colleen.

It’s been a long summer waiting for my tomato harvest and to be able to share my ketchup recipe with you!
I have tried so many ketchup recipes over the years and finally found one that checks ALL the boxes and tastes fantastic!
It’s the closest to Heinz ketchup (or better) you will ever taste 😉
Not only are you getting this delicious recipe, I am sharing with you how I thicken all my tomato products in a matter of minutes rather than standing at the stove for hours cooking them down.
Whether you’re a beginner or seasoned canner I will take you through all the steps of how to prepare your tomatoes, make the ketchup and how to water bath.

Ketchup recipe:

22 lbs tomatoes
4 cups white distilled vinegar
2 cups white sugar
1 cup brown sugar
5 TBSP salt
1 TBSP onion powder
1/2 tsp cinnamon
1/2 tsp ground cloves
1/2 tsp allspice
1/2 tsp cayenne
46 oz tomato paste
1/3 cup thermoflo (or clearjel)(* I’m sure you can substitute Arrowroot or Panoma’s Pectin if you prefer

Trim, quarter tomatoes into large stockpot. Simmer until tomatoes are soft and tender.
Remove excess liquid.

Run tomatoes through food mill/tomato press (discard skins and seeds)

***reserve 1 cup of tomato juice for thickening later

Simmer down 2-3 hours or DO MY STRAINER TECHNIQUE

Add vinegar, sugar, spices and tomato paste and bring to a simmer. Meanwhile, place 1/3 cup of thermoflo into a bowl, slowly whisk in the reserved tomato juice. Then slowly whisk it into pot of ketchup.

Water bath 10 minutes for pints, 15 minutes for quarts
1 inch headspace
