Serves 2
Firstly cut out cauliflower florets & soak in warm salted water to discard if any worms or insects. Discard the water & keep aside. Heat kadai, add 2 tbsp oil, 1 tsp jeera, let it splutter. Add 1 finely chopped medium sized onion. Let it cook till nice and translucent. Add 2 green chillies & few curry leaves. After they turn light brown in color, add 1 finely chopped tomato medium sized. Sprinkle salt & asafoetida. Let it cook & turn nice and mushy. Once it releases oil, add 1/2 tsp haldi, 1 tsp red chilli powder, 1 tsp dhaniya powder, 1 tbsp kitchen king masala, and a little water. Let it cook nicely. You can cover with lid & let it cook for about 2 mins. Then add in the cauliflower. If the base is too dry, sprinkle a handful of water over it. Mix it well & make sure all the masala is coated on the florets. Season with remaining salt, and cover with lid & cook on low-medium flame for about 10-12 mins. Keep mixing at intervals. Once its almost ready garnish with coriander leaves and serve hot with rotis.
