You must try this tasty dish. It is so easy to make and so healthy and yummy.


Ingredients
Whole chicken and cut into pieces as desired or chicken thighs according to the size of the family
1/2 cup oil
1 large onion, sliced into large pieces
1 large eggplant, cut into thick slices
1 large squash or zucchini, cut into thick slices
1 large sweet potato, cut into thick slices
1 small head of cauliflower, cut into florets
2~3 cloves garlic, optional
1 hot green pepper, optional
2 cups basmati rice, washed only
2 cups hot water

spices

1 tablespoon of mixed spices
1/2 teaspoon turmeric
1/2 teaspoon cinnamon
1/2 teaspoon cardamom
1/2 teaspoon hot red pepper, or to taste
1/2 teaspoon black pepper, or to taste
2 teaspoons salt, or to taste

Steps:
-All vegetables are cut into thick slices, seasoned with salt and pepper and drizzled with olive oil.
-I used the air fryer at 400F for 10 to roast the vegetables but you can use the oven to roast everything at once or you can fry them too.
-Press the sauté button on medium level in the instant pot(size=4qt)
-Add olive oil, then sear the chicken pieces in batches.
-Add onions and cook for a few minutes
-Return the seared chicken pieces and mix well with the onions.
-Add hot water and scrape the bottom of the pot (very important) so you don't get a burn mark.
-Add all spices and salt and mix well.
-Add a few garlic cloves (optional)
-Add the washed basmati rice and try to level everything.
-Add more water to cover the rice, about 1/4-1/2 cup more.
-Add the roasted vegetables and press gently and add green chili (optional)
-Make sure the sealing ring is in place and the handle is in the seal position and closed.
-Press the rice button for 12 minutes.
-When time is up, wait about 3 minutes and then release the remaining pressure.
-Open the cover when this safety button is down.
-Cover the inner pot and remove it from the main pot and wait about 20~30 minutes before flipping the pot over and serving it.-Enjoy a tasty, easy dish with a simple salad and pickles.
