These quick and easy Tuna fish Cakes are a burst of colour and flavour. This recipe is so simple to make and comes together in minutes. It is so tasty that you will feel like making them very often as I do too. It is good for an everyday meal as well as for a party spread.

Ingredients:
2 Tuna in sunflower oil tins (John West)
2 Bread slices 50/50 or any bread of your choice
1 Red Bell Pepper
1 Tomato
1 Red Onion
3-4 Garlic Cloves
2 Green Chillies
1 tsp Salt
1 tsp Black Pepper
1 tbsp Lemon Juice
1 bunch Fresh Coriander
2 Large Eggs
