In this episode, So Han explores some of the oolongs from Anxi county in Fujian province in South Eastern China. These teas showcase a wide variety of oxidation and though traditionally charcoal roasted at a higher-oxidation, a newer low-oxidation form of processing has been dominating in popularity in the region. So Han showcases both of these styles with Tie Guan Yin and also demos Golden Turtle (one of the Color Types) and a bonus tea (Zhang Ping Shui Xian) from a town adjacent to Anxi County.
