Ingredients (सामग्री) :

Papdi nu Undhiyu
पापड़ी का उंधियू (Papdi nu Undhiyu)

*स्टफिंग के लिए (For Stuffing):*
150 ग्राम बारीक कटा हरा लहसुन (150gm finely chopped green garlic)
200 ग्राम बारीक कटा धनिया (200gm finely chopped coriander)
2-3 टेबलस्पून तिल (2-3 tbsp sesame seeds)
½ कप मोटा पिसा हुआ मूंगफली (½ cup coarsely ground peanuts)
5-6 टेबलस्पून धनिया पाउडर (5-6 tbsp coriander powder)
3-4 टेबलस्पून हरी मिर्च और हल्दी का पेस्ट (3-4 tbsp fresh green chilli and turmeric paste)
4-5 टेबलस्पून अदरक-लहसुन का पेस्ट (4-5 tbsp ginger-garlic paste)
3-4 टेबलस्पून मूंगफली का तेल (3-4 tbsp peanut oil)
1-2 टेबलस्पून तिल का तेल (1-2 tbsp sesame oil)
1 टीस्पून चीनी (1 tsp sugar)
1 टीस्पून गरम मसाला (1 tsp garam masala)
5-6 टेबलस्पून ताजा नारियल (5-6 tbsp fresh coconut)
1 कप कुचली हुई मटर (1 cup crushed green peas)
स्वादानुसार नमक (Salt to taste)

*सब्जियों के लिए (Vegetables):*
2-3 देशी छोटे बैंगन (2-3 desi small brinjal)
1 कच्चा केला (1 raw banana)
2-3 छोटे आलू (2-3 small potatoes)
1-2 छोटे शकरकंद (1-2 small sweet potatoes)
100 ग्राम रतालू (100gm purple yam)
500 ग्राम सुरती पापड़ी (500gm Surti Papadi)
¼ टीस्पून सोडा बाइकार्ब (¼ tsp soda bicarb)

*पेस्ट के लिए (For Fine Paste):*
3-4 पालक की पत्तियां (3-4 spinach leaves)
¼ कप धनिया (¼ cup coriander)
¼ कप हरा लहसुन (¼ cup green garlic)
3-4 टेबलस्पून तेल (3-4 tbsp oil)
ताजा कटा हरा लहसुन और धनिया (Fresh chopped green garlic and coriander)

*मुठिया के लिए (For Muthiya):*
1 कप बारीक कटा पालक (1 cup finely chopped spinach)
½ कप बेसन (½ cup gram flour)
½ कप गेहूं का आटा (½ wheat flour)
1 टेबलस्पून तेल (1 tbsp oil)
2 टेबलस्पून तिल (2 tbsp sesame seeds)
स्वादानुसार नमक (Salt to taste)
1 टेबलस्पून धनिया पाउडर (1 tbsp coriander powder)
1 टेबलस्पून अदरक-लहसुन का पेस्ट (1 tbsp ginger-garlic paste)
½ टीस्पून चीनी (½ tsp sugar)
1 टेबलस्पून दही (1 tbsp curd)
1 टेबलस्पून हरी मिर्च का पेस्ट (1 tbsp green chilli paste)
½ टीस्पून गरम मसाला (½ tsp garam masala)
