Recipe for Goya Champuru

Ingredients:
1 goya (bitter melon), seeds removed and sliced
1 block firm tofu, cut into small squares
100g pork, spam, bacon, or ham
3 eggs, lightly scrambled with a pinch of salt
2 tsp soy sauce
2 tsp water or broth (hondashi, vegetable, or chicken)
1 ½ tsp salt
1 tsp brown sugar

Instructions:
1. Lightly scramble eggs and set aside.
2. Stir-fry pork (or substitute) until browned.
3. Add goya slices and cook briefly.
4. Stir in tofu and let it brown slightly.
5. Add soy sauce, broth, salt, and brown sugar.
6. Return scrambled eggs and mix gently.
