Healthy Snickers Bars || Vegan + Gluten Free Recipe

VEGAN SNICKERS BARS! This recipe is super easy to make and has all the taste without all the nasties :) I've tried quite a few snickers recipes over the past year and this one is definitely closest to the original!

Ingredients
Nougat base
1 cup blanched almonds
1/2 cup medjool dates
1/2 tsp vanilla bean paste
1 tbsp peanut butter

Caramel
2 cups dates (soak in boiling water until cool and drain)
1 cup peanut butter
1/4 tsp salt
2 tbsp melted coconut oil

100g vegan chocolate
1/2 cup peanuts


Preparation
Add the almonds to your food processor blitz them at high speed until they form a crumb.
Add the dates, vanilla and peanut butter and blend once more until the mixture reaches a dough consistency.
Line a loaf tin with parchment paper and press the dough into it using either your hands or a spatula. Once you have an even base, set it aside in the fridge.
For the caramel, pour boiling water on the dates and allow them to sit until the water cools. Drain them and add them to the food processor along with the peanut butter, salt and melted coconut oil. Process on high speed until a smooth caramel is formed.
Spoon the caramel on top of the nougat base and spread out evenly using a spatula. Top with peanuts and Freeze for 1 -2 hours.
Once the mixture has set remove it from the loaf tin and cut into 6-8 pieces. Melt the chocolate over a double boiler and spoon it over each bar to fully coat it. Sit the chocolate bars on a tray lined with parchment paper and refrigerate or freeze for a few minutes until set.
