►For the Lamb Chops

►Spices

2 tsp black peppercorns
1 tsp pink peppercorns
1 tsp fennel seeds
1 tbsp coriander seeds
2 tsp black cumin seeds
2 tsp mushroom powder
2 tsp lamb seasoning
2 tsp salt

Butter
Thyme
Garlic cloves

►For the Jollof Rice

1 small red onion
3 garlic cloves
Some ginger
1 red pepper
2 tomatoes
1 chicken stock cube
1 tsp red chili flakes
1/4 cup water

1/2 tsp black pepper
1 tsp cayenne pepper
2 tsp salt
2 bay leaves
1 thyme sprig
1 tbsp tomato paste
1 tbsp bbq sauce (optional)
2 tsp light soy sauce (optional)
1 small brown onion
Spring onion greens
Lime

2 cup basmati or long grain rice (washed)
2.5 cup water

►Drink

2 tbsp mixed berries
2 tsp lime juice
60ml cranberry juice
Ice
150ml Sparkling passion fruit
Mint
