Simple and wholesome easy dish. All you need is a can of salmon (I keep several in my pantry), a couple of eggs, breadcrumbs and a bit of seasoning. The patties are fried quickly in oil and served with sides of your choice. Just enough crispy on the outside with a soft and tender inside. SALMON PATTIES
1 small onion, grated or chopped fine
2 large eggs
1 (14 ¾ ounce) can salmon – I prefer pink- drained
1 heaping tablespoon flour
1 ½ - 2 teaspoons seasoning salt – or to your taste
¼ cup breadcrumbs or panko crumbs
Vegetable oil for frying

In a mixing bowl, mix the onion and eggs together. When combined, add the salmon, flour, seasoning salt and stir well to combine.
Divide the mixture into equal portions. The patties should be about the size of the palm of your hand and roughly 1 to ½ inches thick.
Using your hand, take a scoop of the breadcrumbs and cover each salmon patty with the breadcrumbs.
In a large skillet, heat the oil over medium-high heat. When the oil starts to shimmer, drop the patties into the hot oil. You may have to work in batches. Reduce the heat to medium and cook the patties on one side until golden brown, 30 to 5 minutes. Turn and cook until the other side is golden brown, Drain on paper towels.
