Lufsa is a tasty and filling potato pancake made with bacon that is quick and easy to prepare. It is the provincial dish of Öland which is the second-largest Swedish island and the smallest of the traditional provinces of Sweden. Lufsa is a perfect weekday dinner and a favorite among children and as usually when having to do with traditional foods from Sweden, it is served with lingonberry jam! 😋
