Serves: 2-8
Prep time: 15 minutes
Cook time: 35 minutes
Special tools: nice pot and a great knife

Ingredients:
1/2 cup double-smoked bacon lardon
3 garlic cloves, sliced
1/2 leek, diced
1 stock celery, diced
1/2 fennel, diced
1 cup Chardonnay gnarly head
2 Yukon gold potatoes, diced
10 Cherry stone clams, scrubbed and rinsed
1/4 cup heavy cream
1 heavy kosher salt and pepper
1/2 lemon juice

Garnish
1/2 teaspoon chives, chopped
1/2 teaspoon dill, picked

Method:
1. Dry sear double smoked bacon, remove and sauté garlic in leftover fat, add onion, potato, celery and fennel.
2. Add clams and deglaze with Chardonnay, reduce by half, shuck clams and add back into the simmer.
3, Add cream and bacon goes back in.
4. Season with salt. pepper and lemon juice.
5. Plate inside one clam and garnish with chives and dill.
