Mochi Cheese
1 medium waxy potato, Yukon Gold - cooked until soft
2 kirimochi cakes, cut into small cubes
2 T. nutritional yeast
1/2 t. Kosher salt
1/2 t. rice wine vinegar
black pepper to taste
