材料:   (wpy )
螃蟹   1只

香料泥:   搅烂成泥
辣椒干   适量   (去籽,用热水泡软,约2分钟)
红辣椒   3条   (去籽,切片)
指天椒   3条
蒜   3瓣   (切粒)
大红葱   1粒   (切片)
姜   1小块   (切片)
蓝姜   1小块   (切片)
香茅   1支   (切片)
石古仔   3粒
虾米   10g   (洗干净,泡软,备用)

青柠檬汁   2粒
蛋   1粒   (打散)
青葱花   少许

酱料:   伴均匀,备用。
番茄酱   2汤匙
辣椒酱   2汤匙
蚝油   1茶匙
黄豆瓣酱   1茶匙半
糖   4茶匙
盐   半茶匙

1.   螃蟹处理干净,炸前切口沾上木薯粉,油温六成热,放入螃蟹炸至半熟,捞起,备用。
2.   保留少许油,倒入香料泥,搅煮至浓稠,如太干可再加少许油,加入酱料,炒至
       变色,出红油,加入少许高汤或清水,大火煮滚,加入螃蟹,盖上,煮滚,转中火,
       焖煮2分钟至汁收浓稠,淋入适量青柠檬汁,翻炒均匀,淋入蛋液,伴一伴至蛋熟,
       即可,起锅,撒上青葱花,即可。

Ingredients (Diana Aw)
1. Crab x1 wash, clean and cut, then coat with tapioca starch on the meat and roe portion
2. Lime x2 extract the juice
3. Egg x1 whisk
4. Stock 1.5 bowl
5. Spring onion diced

(A) Ingredients (blend together)
1. Dried chilli x5 soak with hot water for 2 min till soft
2. Red chilli x3 remove seeds and cut slices
3. Chilli padi x3 cut halves
4. Garlic x3 cut smaller
5. Red onion x1 cut smaller
6. Ginger small piece cut slices
7. Galangal small piece cut slices
8. Lemongrass x1 cut slices
9. Candlenuts x3
10. Dried shrimps 10g wash and soak in hot water till soft
11. Little water

(B)Combine these ingredients in a bowl
1. Tomato sauce 2tbsp
2. Chilli sauce 2tbsp
3. Oyster sauce 1tsp
4. Bean paste (Taucu) 1.5tsp
5. Sugar 4tsp
6. Salt 1tsp

Method
1. Increase the oil temperature to 160deg and fry the crab shell first, then the balance parts. Do not overcook. Set aside
2. With some oil in the wok, add in the blended sauce (A) and stir fry till water has evaporated and the sauce turns fragrant
3. Add in sauce (B) and stir well till colour turns darker and oil extracted
4. Add 1.5 bowl of stock and turn to high heat to boil
5. Add in crab and lid on, simmer for 2min under medium heat
6. Taste testing and add the lime juice
7. Add in egg and mix
8. Dish up and garnish with spring onion
9. Serve and enjoy! 💕
