Chocolate financiers are a variation of the classic French financier cake, which is a delicate and moist cake often served with coffee or tea - the perfect afternoon treat.

Ingredients (10-12 servings)

50g of all-purpose flour
2g of baking powder
120g of almond flour
100g of icing sugar
4 large egg whites
150g of unsalted butter
150g of dark chocolate

Recipe

1. In a large mixing bowl, add the plain flour, baking powder, almond flour, and icing sugar. Whisk them all together using a wooden spoon until it’s well combined.
2. Preheat the oven to 160°C (fan-forced) or 180°C if using conventional baking.
3. Heat a small saucepan over a medium heat. Place the butter into it and let it melt until it turns golden brown and starts to smell nutty. Stir constantly until browned, then immediately remove from the heat and let it cool for 5 minutes.
4. Place the crushed chocolates in a bowl, then put the bowl on a pan of hot water. Let the chocolate melt using this bain-marie technique and stir from time to time. Once the chocolate is melted, remove the chocolate bowl from the bain-marie.
6. Separate the egg whites from the yolks, and add the egg whites to the dry ingredients. Mix until well combined (we don’t use the egg yolks in this recipe).
7. Pour the browned butter into the mixture and stir until smooth. Pro tip: use a sieve to catch any milk solids. Then pour the melted chocolate into the mixture and whisk until well combined.
9. Prepare a petite loaf or muffin pan with non-stick cooking spray or melted butter. This is crucial to facilitate the unmolding of the cakes after baking.
10. Pour the mixture into the prepared pan using a spoon or a piping bag and fill each cup about 2/3 of the way full.
11. Bake for 15-20 minutes, or until the edges are crispy and the centre is set.
13. Let the financiers cool in the muffin pan for 5-10 minutes, then transfer them to a wire rack to cool completely.
14. Before serving, you can dust with powdered sugar or drizzle melted chocolate on top of the financiers for an extra touch.
