MASIKOY – is a Pinoy kakanin popular in the province of Pangasinan. It is a rice cake cooked in sweetened coconut milk with toasted sesame seeds.

Ingredients:
RICE CAKE:
2 1/2 cups glutinous rice flour
1 cup or 450 ml water
SAUCE
1/3 cup sesame seeds, toasted and crushed
1 cup coconut milk
1, 1/2 cups water
3/4 cup brown sugar (add more according to your taste)
1 tsp. anise seeds

Instructions:
1. Dry toast the sesame seeds until brown
2. Put in a plastic then crush using a rolling pin. Transfer and set aside.
3. In a bowl combine glutinous rice flour and water. Gradually pour water, mix well until it forms into a dough.
4. Scoop a small piece of dough then flattens it out to form an oblong disc. Do it with the rest and set aside.
5. In a deep pan, pour water and coconut milk, bring into a boil.
6. Drop the rice discs when the water is boiling.
7. Add the sugar then stir to dissolve. Add anise seeds and sesame seeds (toasted and crushed). Combine well to incorporate.
8. Once the rice discs have floated to the surface, turn off fire and remove from heat. Let cool.
9. Transfer to a serving container.
