Ingredients

for 12 servings

• 8 cups Flour (1 kg)

• 5 teaspoons Baking powder

• 4 teaspoons of Brown Sugar

• 3 cups Water

• 1 cup of Evaporated milk

• 1/2 Butter

• 1/4 cup of Oil

• Oil, for frying


Preparation

• In a large bowl, combine the flour, sugar, and baking powder, and mix until fully incorporated.

• Combine the 1 cup of milk and 3 Cups of water in a Measuring cup.

• Slowly add the milk and water mixture using the tips of your finger until the flour mixture forms a soft to medium dough.

• Sprinkle some dry flour to the dough and grab, squeeze and turn the dough for 10 minutes.

• Drizzle some oil on the entire dough and press the dough all over using you knuckles for 1 minute. Then cover the dough with a damped towel and allow to rest for 10 minutes.


• After the dough rest, divide the dough into roughly 12 loyas (balls), cover with a damped towel, and let rest for about 10 minutes.

• After the 10 minutes, sprinkle each ball with flour and flatten or roll out into a circle roughly 10 inches (25.4-cm) in diameter.

• Make a butter paste using 1/2 butter and a little oil and spread such butter mixture on each round, sprinkle some flour on the inside of the round and make a cut from the center out to the edge, then roll to make a cone.

• Press the peak and flatten the center of the cone. Cover with a damped towel and let rest for 2 hours.

• On a floured surface, roll each ball into a circle roughly 10 - 14 inches (25.4 - 36.56 cm) in diameter (Of course, depending on the size of your Tawa).

• Heat a tawa or flat frying pan over slow heat. Coat with oil and place a round of dough on the pan or Tawa.

• When you place the round of dough on the Tawa place oil on the surface. Then flip the
round dough and place oil on that surface of the dough. Then flip the dough over again. Cook the dough until light brown, watching carefully, and flipping the dough and cooking each side, especially the ends. The process may take about about 3-4 minutes. Repeat with the remaining dough rounds.

• Break up the cooked roti with your hands or serve whole.

• Serve the fried roti with the fillings.
