Cake:
2 1/2 cups cake flour
2 cups sugar
2 tsp. baking powder
1/2 tsp. salt
3/4 cup butter (1 1/2 sticks)
1/4 cup vegetable oil
3 large eggs
2 egg yokes
2 tsps. coconut extract
1 cup coconut milk
Filling:
1/2 cup sugar
2 tbsps. all-purpose flour
1 large egg yoke (beaten)
1 1/2 cups crushed pineapple (in heavy syrup, undrained)
1 tbsp. fresh squeezed lemon juice (optional)
1 tbsp. butter
1 tsp. vanilla extract
1 tsp. coconut extract
Frosting:
12 ounces Jet Puff Marshmallow Cream
12 ounces ( 1 1/2 blocks) cream cheese, softened
1 tsp vanilla extract
1 tsp coconut extract
