Salmon Terrine

Makes for a delicious starter served with whole wheat bread or toasted ciabatta.
Serves 4 to 6

Ingredients

1 x medium loaf tin
1 large cucumber shaved into long strips

The Filling


15 ml powdered gelatin

200 g smoked salmon chopped


2 spring onions chopped


1 tablespoon lemon zest

1 tablespoon lemon juice


300g cream cheese

120 ml Greek yogurt

1 tablespoons dijon mustard

2 tablespoon capers chopped


1 medium gherkin finely chopped

Handful dill chopped


1 tablespoon finely chopped lemon zest

1 clove finely grated garlic

Salt and pepper to taste

Method

Soak the gelatine in a little bit of water in a small bowl until softened.

1. Now line a 450g loaf pan with plastic wrap, make sure the plastic overhangs as you need it to cover the terrine once it is assembled
2. .
Line the pan with the sliced cucumber, laying the slices widthways across the base and up the sides and leaving enough hanging over the edge to fold over the top of the filling.

3. Make the filling by stirring together the filling ingredients, taste and adjust the seasoning to your liking.

4. Spoon the filling into the prepared tin,flip the over hanging cucumber over the filling and smooth down.

5. Chill for 5 hours, or better still over night
