Osso Buco Ragu
Ingredients:

1kg Osso buco
200g plain flour
3 onions - diced finely
6 celery sticks - diced finely
4 large carrots - diced finely
4 garlic cloves - minced
4 anchovy fillets - roughly chopped
1-2 tbsp tomato paste
350ml white wine
1 litre chicken stock
3 bay leaves
2 rosemary sprigs
Thyme
1 cinnamon stick
Parmesan rind (optional)

For the Gremolata:
Parsley - finely chopped
1 garlic clove - minced
1 lemon - zested and juiced
Extra Virgin Olive Oil

For the Breadcrumbs (Italian Pangrattato):
Stale sourdough or bread - crusts removed
Parmesan (optional)
Lemon juice
Sea salt
2 garlic cloves - crushed
Olive oil
Butter (optional)
Herbs: Oregano/Thyme/Rosemary (optional)
