Simply remove as much liquid as possible from both the tofu and canned tuna. Then add just one egg and a small amount of flour. This must be one the easiest savory pancake recipe that I have. These pancakes are abundant in protein and low in carbohydrates. I’ve recently fallen in love with them.

Ingredients
100g or 3.5oz firm tofu
200g or 7oz canned tuna
2 tablespoons chopped zucchini.
2 tablespoons chopped carrot.
1 small chili, chopped, optional.
1 tablespoon chopped green onion.
1 big egg
3.5 tablespoons all-purpose flour
3 tablespoons vegetable oil, to cook the pancake.
1/2 teaspoon salt
1/4 teaspoon ground black pepper

Instructions
1. Squeeze out the water from tofu using a cheesecloth. Transfer the squeezed tofu to a bowl, and lightly shred by hands.
2. Drain the oil from the canned tuna. Sieve the tuna pressing down with a spoon like this. Then combine it with tofu.
3. Chop the zucchini, the carrot, and the chili. Combine all the chopped vegetables with one egg, salt, and ground black pepper in a bowl.
4. Add in all-purpose flour to the bowl and mix them well. Shape the mixture into one bite sized pieces using your hands.
5. Heat the pan over medium heat. Place the tuna tofu pancakes into the pan and cook until golden brown on both sides.
